When does spring start? How do countries identify the start of the seasons?

Moving to Australia I noticed the seasons here start on the 1st every three months, rather than following the sun typically around the 21st of the month. Turns out each season has both an astronomical start and a meteorological start.
- The astronomical start date is based on the position of the Sun in relation to the Earth
- The meteorological start date is based on our 12-month calendar
Sweden and Finland use thermal seasons, which are defined based on mean daily temperatures.
And Antarctica seems to only use summer and winter.
